Recipe - Thai Mango Rice Pudding

Coconut, mango and sweet rice make this classic Thai dessert. It's colourful, fragrant and light, great with tea or coffee after dinner.

Ingredients

  • 1 1/2 cups uncooked white rice
  • 3/4 cup sugar, or to taste
  • 2 mangoes, peeled and sliced
  • 285 gms can cream of coconut (optional)
  • 2 cups water

Preparations

Combine the rice and water in a pan. Bring to a boil, then cover and reduce heat to low. Simmer for 15 to 20 minutes, until water is absorbed.

Mix the desired amount of sugar into the hot rice. Portion the rice into 4 bowls. Top with mango slices, and pour some cream of coconut over the top of each bowl.
